Earthen pots (Donabe) made of clay have numerous tiny holes that are invisible to the eye. The role of the “Medome” is to coat these holes with starch.
The sealing prevents cracks, leaks, and stains. So be sure to do it at the beginning of use.
The method of sealing is as follows.
- Fill an earthenware pot up to the eighth part of the water.
- Add 1/5 of the rice to the water and heat uncovered.
- Simmer over low heat for about 1 hour, then turn off the heat and leave the pot overnight.
- Rinse with water and dry well to complete the sealing.
Sealing is one of the maintenance procedures to prolong the life of earthenware pots.
Be sure to do this not only at the beginning of use, but also on a regular basis.
