1. Cherry Blossom Jelly and Cheese Mousse – Easy Spring Dessert Recipe

【Ingredients for 2 servings】

【For the cheese mousse

Cream cheese 120g

Heavy cream 80g

Sheet gelatin 2g

Sugar 40g

【For the cherry blossom jelly

Water 50g

Sheet gelatin 1g

Lemon juice: 1/4 of a lemon

Sugar 5g

Salted cherry blossoms 15g

【Instructions】

1.Place the both sheet gelatin in separate bowls with water.

Bring cream cheese to room temperature.

2. [Making cheese mousse]

Place the cream cheese in a bowl and soften it with a whisk, add 40g of sugar and mix.”

3. Add half of the heavy cream and mix.

* Warm the remaining heavy cream until it reaches around 36 degrees.

4. Add the 2g of squeezed sheet gelatin to the warmed heavy cream and dissolve it.

5. Add the whipping cream from step 3, mixing well.

6. Pour into glasses and refrigerate for 1-2 hours until it solidifies. * 110g per glass”

Soak the salted cherry blossoms in luke warm water for about 5 minutes to remove the salt, then pat dry them.

9. Cool down the mixture in step 8.

2. Easy Sakura vanilla Ice Cream

【Ingredients (For 2 Servings)】

1 cup vanilla ice cream
8 salted cherry blossoms

Preparation

Shake the pickled cherry blossoms in water to remove some of the saltiness, and roughly chop the remaining blossoms, leaving 2 blossoms for garnish.

Instructions

1. Place vanilla ice cream at room temperature to soften slightly.
2. Mix the vanilla ice cream with the salted cherry blossoms, transfer to a container, chill in the freezer, and place in a serving bowl.
3. Garnish with pickled cherry blossoms.

【Ingredients for 2 sandwiches】

1/2 baguette
2-4 slices of prosciutto
2 sticks of broccolini
30g cream cheese
15g salted cherry blossoms
30g honey

【Instructions】

1. Make honey pickled cherry blossoms.

Boil water in a pot, boil the salted cherry blossoms for about 1 minute, then drain in cold water.

* Reserve the boiled water.
Remove the water from the boiled salted cherry blossoms with a paper towel and mix with the honey.

2. Cut the broccolini into 2cm lengths, boil them in the boiling water, then rinse with cold water and squeeze out excess water.

3. Make a slit in the baguette, sandwich the cream cheese, prosciutto, and broccolini, then top with the honey-pickled cherry blossoms.

4. Cherry-scented turnip senmaizuke

A pickled dish full of cherry blossom flavor.

桜の塩漬けで捨ててしまいがちなお塩を活用した、お酒にも合う春らしい漬け物です。

【Ingredients】

2 turnips (about 400g for 2 pieces)
Salted cherry blossoms approx. 10g

1. Cut off the leaves from the turnips, peel the turnips with a peeler, and slice them into thin slices about 2mm thick.

2. Cut the leaves into 1cm lengths.

3. Put the turnips and leaves in a bowl, weigh them, and prepare 2.5-3% salted cherry blossoms.
(3% gives a strong salty taste)


4. Leave a small amount of salted cherry blossoms for decoration, and finely chop the rest of the cherry blossoms.

5. Add the salted cherry blossoms, mix, and let stand for about 10 minutes.
